These honey glazed rainbow carrots are a quick and easy side dish that goes from fridge to table in just 25 minutes. With a sweet, buttery glaze and tender, colorful carrots, this recipe is perfect for busy weeknights and special occasions alike.

Ingredients

Scale
  • 1 pound rainbow carrots (or standard orange carrots)
  • 3 tablespoons honey (mild wildflower or clover honey recommended)
  • 2 tablespoons unsalted butter (or plant-based butter for dairy-free)
  • ½ teaspoon fine sea salt or kosher salt
  • 4–5 sprigs fresh thyme (or ½ teaspoon dried thyme)
  • ¼ teaspoon freshly ground black pepper
  • Optional garnish: fresh parsley, chopped

Instructions

  1. Prep the carrots: Trim the green tops, leaving about half an inch attached. Scrub the carrots well under cold water. If any carrots are significantly thicker, cut them in half lengthwise or into smaller pieces for even cooking.
  2. Heat the skillet: Place a large skillet (10-12 inches) over medium heat. Add the butter and let it melt completely. Swirl to coat the bottom. Cook until the butter stops foaming and smells nutty.
  3. Add honey and seasonings: Drizzle in the honey, then add the salt and black pepper. Stir until fully combined and bubbly.
  4. Add the carrots: Carefully add the carrots to the skillet in a single layer. Use tongs to coat each piece in the glaze. Cook undisturbed for about 2 minutes.
  5. Cook and toss: Continue cooking, tossing every 2-3 minutes, for 12-15 minutes, until the carrots are tender and the glaze is thick and syrupy. Look for golden-brown caramelized spots.
  6. Add the thyme: When the carrots are almost tender (fork-tender with slight resistance), strip the leaves from the thyme sprigs and sprinkle over the carrots. Toss and cook for another 2 minutes.
  7. Check for doneness: Test a carrot with a fork—it should be tender but not mushy. The glaze should cling to the carrots without pooling. If too thin, cook 1-2 minutes more.
  8. Serve immediately: Transfer to a platter, spoon remaining glaze over the top, and garnish with fresh parsley if desired. Serve hot, warm, or at room temperature.

Notes

Don’t overcrowd the pan—use two skillets or cook in batches for larger amounts. Keep heat at medium to prevent honey from burning. If glaze gets too thick, add a splash of water. Save carrot tops for pesto or garnish. For dairy-free, use plant-based butter or coconut oil. For vegan, substitute honey with maple syrup or agave nectar.
