Ingredients

  • Mini bagels (plain or everything-flavored)
  • Tomato pizza sauce (about 1 tablespoon per bagel half)
  • Fresh mozzarella cheese, sliced thin (about 1 ounce per bagel half)
  • Grated Parmesan cheese
  • Olive oil (for brushing)
  • Dried Italian herbs (oregano, basil, red pepper flakes)
  • Optional toppings: mini pepperoni slices, sliced olives, diced bell peppers

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the mini bagels in half horizontally and place cut side up on a baking sheet lined with parchment paper.
  3. Lightly brush each bagel half with olive oil.
  4. Spread a thin layer of tomato pizza sauce on each bagel half (about 1 tablespoon).
  5. Layer thin slices of fresh mozzarella over the sauce (about 1 ounce per half).
  6. Sprinkle grated Parmesan cheese and dried Italian herbs on top.
  7. Add any optional toppings as desired.
  8. Bake for 8-10 minutes, or until the cheese is melted and bubbly and the edges of the bagels are golden and crispy.
  9. Let cool for a couple of minutes before serving or packing.

Notes

Use fresh mozzarella instead of shredded for better melt and texture. Brush bagels with olive oil to prevent sogginess and ensure crispiness. Watch baking time closely to avoid burning. Optional toppings should be thin and small for even cooking. For extra crispiness, broil for 30 seconds after baking but watch carefully.
