These Sparkling Sugared Cranberry Bites are a quick and easy party favorite made with just three ingredients. They feature a crunchy, sparkly sugar coating that gives way to a burst of tart cranberry juice, perfect for cheese boards, cocktail garnishes, or snacking.

Ingredients

Scale
  • 12 ounces (340 grams) fresh cranberries
  • 1 cup (200 grams) granulated sugar, divided
  • 1/2 cup (120 milliliters) water

Instructions

  1. Rinse fresh cranberries in a colander under cool water. Discard any soft, mushy berries or those with stems. Pat very dry with paper towels.
  2. In a small saucepan, combine 1/2 cup water and 1/2 cup granulated sugar. Bring to a gentle boil over medium heat, stirring once or twice. Boil for about 2 minutes until sugar is completely dissolved and syrup is clear. Remove from heat and let cool for 2-3 minutes until warm but not hot.
  3. Pour warm syrup into a medium mixing bowl. Add all cranberries and gently stir with a spatula until every berry is coated. Let sit in syrup for about 2 minutes, stirring occasionally.
  4. Using a slotted spoon or spider strainer, lift cranberries out of syrup and transfer to a parchment-lined baking sheet or wire rack. Let drain for about 5 minutes until tacky but not dripping.
  5. Place remaining 1/2 cup sugar in a clean mixing bowl. Working in batches, add a handful of tacky cranberries to the sugar and gently toss with hands or a spoon until each berry is completely coated. Transfer coated berries back to baking sheet, separating any that are stuck together.
  6. Let cranberries dry at room temperature for at least 1 hour, preferably 2, until sugar feels dry to the touch and berries don’t leave sugar residue on fingers.
  7. Transfer to a serving bowl or airtight container. Serve immediately or store at room temperature for up to 3 days.

Notes

Don’t skip the drying step after the syrup; if cranberries are too wet, the sugar will become a sticky mess. Work quickly when coating with sugar as the syrup dries fast. For best results, make up to 24 hours in advance and store at room temperature in an airtight container. Do not refrigerate.
