These spooky easy Halloween deviled egg eyeballs are a fun and creepy twist on classic deviled eggs, perfect for Halloween parties. Creamy, tangy filling with a black olive ‘pupil’ and pimento ‘bloodshot veins’ creates an unforgettable eyeball effect that kids and adults love.

  • Ice water (for ice bath)
  • 1/3 cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper (freshly ground preferred)
  • 1/4 teaspoon paprika (plus extra for garnish; smoked paprika works great)
  • 1 can (6 ounces) large black olives (pitted, whole)
  • 1 small jar pimentos or roasted red peppers (for bloodshot veins, optional)

Instructions

  1. Boil the eggs: Place 12 eggs in a single layer in a large saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Cover, turn off heat, and let sit for exactly 12 minutes.
  2. Ice bath: While eggs sit, fill a large bowl with ice and cold water. Transfer eggs to ice bath using a slotted spoon. Let chill for at least 10 minutes.
  3. Peel eggs: Gently tap each egg on counter to crack shell, roll between palms, and peel starting from the wider end. Rinse under cold water and pat dry.
  4. Slice and scoop: Slice each egg in half lengthwise with a sharp knife. Pop out yolks into a medium bowl. Arrange egg white halves on a serving platter, cut side up.
  5. Make filling: Add mayonnaise, yellow mustard, white vinegar, salt, pepper, and paprika to yolks. Mash with a fork until completely smooth (2-3 minutes). Taste and adjust seasoning.
  6. Prepare decorations: Drain black olives and slice crosswise into 1/4-inch rounds. Drain pimentos and cut into tiny thin strips.
  7. Fill eggs: Spoon yolk mixture into a piping bag or zip-top bag with corner snipped off. Pipe a generous mound into each egg white half.
  8. Create eyeballs: Gently press one black olive slice into center of each filled egg. Place 2-3 tiny pimento strips around edge of olive, radiating outward like bloodshot veins.
  9. Final touch: Lightly sprinkle a tiny pinch of paprika over each eyeball.
  10. Chill and serve: Cover platter with plastic wrap and refrigerate for at least 30 minutes before serving. Serve cold.

Notes

For best results, use older eggs (at least a week old) for easier peeling. The 12-minute off-heat method is foolproof. If you live at high altitude, add an extra minute or two. Don’t overmix the filling to avoid greasiness. Press olive slices just enough to stay, not too deep. Make ahead: boil and peel eggs up to 2 days ahead; store in cold water in fridge. Add paprika garnish just before serving to prevent sogginess.
