Ingredients

Scale
  • 1 pound ground beef (80/20)
  • 1 packet taco seasoning
  • 1 can (16 oz) refried beans
  • 1 cup sour cream
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup salsa
  • 1/4 cup sliced black olives (optional)
  • 2 green onions, sliced
  • 3 ripe avocados
  • 1/4 cup finely diced red onion
  • 1 jalapeño, seeded and minced
  • 1 Roma tomato, diced (seeds removed)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Tortilla chips (Tostitos Scoops recommended)
  • 1/2 cup black beans, drained and rinsed
  • Fresh cilantro sprigs for garnish

Instructions

  1. Brown the beef: Heat a skillet over medium-high heat. Cook ground beef until no longer pink, about 8-10 minutes. Drain excess fat. Add taco seasoning and 1/4 cup water. Simmer for 3-4 minutes until thickened. Set aside to cool slightly.
  2. Make the guacamole: Cut avocados in half, remove pits, and scoop flesh into a medium bowl. Add lime juice and mash to desired consistency (leave slightly chunky). Fold in red onion, jalapeño, tomato, cilantro, salt, and pepper. Cover with plastic wrap pressed directly against the surface.
  3. Layer the base: Spread refried beans evenly across the bottom of a 9×13 inch baking dish. Top with the seasoned beef, spreading evenly.
  4. Add creamy layers: Mix sour cream and salsa in a small bowl. Spread over the beef layer. Sprinkle shredded cheese evenly over the top.
  5. Create the graveyard scene: Arrange black beans in small clusters around the edges. Sprinkle sliced black olives randomly. Place tortilla chip tombstones standing up in the guacamole. Arrange guacamole tombstones in clusters. Add cilantro sprigs around tombstones.
  6. Chill and serve: Refrigerate for 15-20 minutes before serving. Serve with extra tortilla chips.

Notes

For firmer guacamole tombstones, use ripe but firm avocados and don’t over-mash. Chill guacamole for 10 minutes before shaping if needed. The dip tastes best after sitting in the fridge for an hour or two. Store covered in refrigerator for up to 2 days.
