  • 1 cup (240 ml) strong brewed coffee or espresso
  • 1 cup (240 ml) whole milk
  • 2 tablespoons (30 ml) pumpkin puree
  • 2 tablespoons (30 ml) maple syrup or brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice
  • 1/8 teaspoon ground nutmeg
  • Pinch of ground cloves
  • Pinch of salt
  • 1/4 cup (60 ml) heavy cream or coconut cream
  • 1 teaspoon powdered sugar
  • 1/4 teaspoon vanilla extract
  • Orange or black food coloring (optional)
  • Black sanding sugar or edible glitter (optional)
  • Cinnamon stick (optional)
  • Candy eyeballs (optional)
  • Whipped cream (optional)

Instructions

  1. Brew your coffee or espresso (2 minutes). Start by brewing 1 cup of strong coffee or 2 shots of espresso.
  2. Combine the milk, pumpkin, and spices in a saucepan (1 minute). In your small saucepan, add the milk, pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice, nutmeg, cloves, and salt. Whisk everything together until the pumpkin is fully incorporated.
  3. Heat the mixture gently (3-4 minutes). Place the saucepan over medium-low heat. Stir frequently with your whisk, scraping the bottom to prevent the milk from scorching. You want it hot but not boiling—look for small bubbles forming around the edges.
  4. Froth the milk mixture (1 minute). Once the mixture is hot, remove it from the heat. Use your frother or whisk to froth it until it’s foamy and slightly thickened, about 30-60 seconds.
  5. Combine the coffee and milk mixture (30 seconds). Pour the brewed coffee into your mug. Slowly pour the frothed milk mixture over the coffee, holding back the foam with a spoon. Then spoon the foam on top.
  6. Make the spooky foam topping (2 minutes). In a small bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip with a whisk or frother until soft peaks form. If using food coloring, add a drop or two and fold it in gently.
  7. Assemble and garnish (1 minute). Dollop the whipped cream on top of the foam. Sprinkle with black sanding sugar or edible glitter. Add a cinnamon stick for stirring, and if desired, stick a candy eyeball on the rim of the mug. Serve immediately while it’s hot.

Notes

Don’t boil the milk to avoid curdling. Whisk pumpkin thoroughly to prevent lumps. For best foam, froth milk while hot. Layer carefully for a beautiful presentation. The spice mixture can be made ahead and refrigerated for up to 3 days.
