Ultimate Loaded Pulled Pork Nachos – Easy Sheet-Pan Dinner

Turn leftover pulled pork into the ultimate sheet-pan nachos with crispy chips, melted cheese, and fresh toppings. This quick and easy dinner is perfect for busy weeknights or game day.

  • 2 cups pulled pork, cooked and shredded
  • 1 large bag (1012 ounces) tortilla chips, sturdy restaurant-style
  • 2 cups shredded cheddar cheese, sharp or medium
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1/3 cup pickled jalapeños, sliced
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream
  • 1 cup pico de gallo or salsa
  • 1 large avocado, diced
  • 1 lime, cut into wedges
  • Optional: sliced black olives, diced tomatoes, hot sauce

Instructions

  1. Preheat your broiler and position the oven rack about 6 inches from the heating element.
  2. Warm the pulled pork in a small skillet or microwave until hot (1-2 minutes in microwave or 5 minutes in skillet over medium heat).
  3. Spread the tortilla chips in a single, even layer on a half-sheet pan (18×13 inches).
  4. Add the first layer of toppings: scatter half of the shredded cheddar and Monterey Jack cheese over the chips, then dot the warm pulled pork evenly across the chips, and add the drained black beans and a few pickled jalapeños.
  5. Add the second layer of cheese: sprinkle the remaining cheddar and Monterey Jack over the top.
  6. Broil for 3-5 minutes, watching closely, until the cheese is completely melted and starting to bubble with a few golden brown spots.
  7. Remove from the oven and let rest for 1-2 minutes.
  8. Add fresh toppings: scatter diced avocado, sliced red onion, and fresh cilantro over the hot nachos. Dollop spoonfuls of sour cream and pico de gallo or salsa across the top. Squeeze lime wedges over everything.
  9. Serve immediately using a spatula to lift portions onto plates.

Notes

Layer cheese underneath the pork and beans to prevent soggy chips. Do not add fresh toppings before broiling. Watch the broiler closely to avoid burning. Warm the pork before adding to ensure even cheese melting. Use sturdy, restaurant-style chips for best results.
