  • 12 ounces fresh or frozen cranberries (one standard bag)
  • 1 large navel orange (preferably organic)
  • 2-inch piece fresh ginger (about 1 tablespoon grated)
  • ½ cup granulated sugar (100 grams)
  • Pinch of salt (about ⅛ teaspoon)

Instructions

  1. Prep your orange: Wash and dry the orange thoroughly. Using a microplane, zest the entire orange, being careful to avoid the white pith. Set the zest aside. Halve the orange and juice it into a small bowl, removing any seeds. You’ll need about ¼ cup of juice.
  2. Prep the ginger: Peel the 2-inch piece of ginger using the edge of a spoon. Grate it finely with a microplane or the fine side of a box grater. You should end up with about 1 tablespoon of grated ginger and its juices.
  3. Combine everything in the saucepan: Add the cranberries, orange juice, orange zest, grated ginger (with its juices), sugar, and salt to a medium saucepan. Stir to combine.
  4. Bring to a boil: Place the saucepan over medium-high heat. Stir occasionally as the mixture heats up. It usually takes about 3-5 minutes to reach a full boil.
  5. Reduce heat and simmer: Once boiling, reduce the heat to medium-low. Let it simmer gently for 5-7 minutes, stirring occasionally. The cranberries will pop and break down, and the mixture will thicken slightly. It’s done when most cranberries have burst and the relish has a jammy, chunky consistency.
  6. Cool and adjust: Remove from heat. Let the relish cool in the pan for about 10 minutes. Taste and adjust sweetness or tartness if needed.
  7. Transfer and chill: Spoon the relish into an airtight container. Let it come to room temperature, then cover and refrigerate. It will thicken more as it cools. For best flavor, make at least 2 hours ahead or the day before.

Don’t walk away from the pot; cranberries can scorch quickly. Grate ginger with the grain to avoid stringy bits. Zest the orange before juicing. Use a heavy-bottomed pan for even heat. The relish thickens significantly as it cools, so don’t overcook. Make ahead for best flavor.
