Light Jack-O-Lantern Egg Breakfast Skillet

A fun and festive 15-minute breakfast skillet featuring bell peppers carved like jack-o’-lanterns with eggs cooked inside. Perfect for Halloween mornings or cozy fall brunches.

Ingredients

  • 2 large orange bell peppers
  • 2 large eggs, room temperature
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon fresh chives or parsley, chopped
  • Optional: a pinch of red pepper flakes

Instructions

  1. Wash and dry bell peppers. Slice off the top ½ inch and bottom ¼ inch to create flat surfaces. Remove seeds and membranes. Using a paring knife, carve a simple jack-o’-lantern face on one side of each pepper, scoring about ¼ inch deep. Set aside.
  2. Place a 10-inch non-stick skillet over medium heat and add olive oil. Let warm for about 30 seconds until shimmering.
  3. Place peppers cut-side down in the skillet. Cook for about 1 minute until bottoms soften and get a slight char.
  4. Flip peppers so carved faces are facing up. Crack one egg into the center of each pepper ring.
  5. Sprinkle smoked paprika, garlic powder, salt, and pepper evenly over the eggs. Add red pepper flakes if using. Immediately cover the skillet with a lid or foil.
  6. Cook over medium-low heat for 5 minutes for runny yolks or 7 minutes for firmer yolks, until whites are set and opaque and peppers are tender.
  7. Remove lid, sprinkle with fresh chives or parsley. Carefully lift each pepper-egg combo out of the skillet and serve immediately.

Notes

For best results, use fresh eggs with firm whites. Keep pepper carvings shallow (about ¼ inch deep) to prevent egg leakage. If pepper wobbles, trim a thin slice off the bottom to make it flat. Serve immediately for runny yolk. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat in a skillet with a splash of water and a lid.
