Quick Baked Apple Cider Donuts with Easy Maple Glaze

  • 1¾ cups (220g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • ½ cup (120 ml) buttermilk
  • 4 tablespoons (57g) unsalted butter, melted and slightly cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup (120g) powdered sugar
  • 3 tablespoons (45 ml) pure maple syrup
  • 12 tablespoons (1530 ml) milk or heavy cream
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Place your donut pan on a baking sheet and lightly spray the donut cavities with non-stick cooking spray.
  2. Reduce the apple cider: Pour 1 cup of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to about ¼ cup (60 ml), about 10-12 minutes. Pour into a small bowl to cool.
  3. Mix the dry ingredients: In a medium bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Mix the wet ingredients: In another medium bowl, whisk together reduced apple cider, buttermilk, melted butter, egg, and vanilla extract until smooth.
  5. Combine wet and dry ingredients: Pour wet ingredients into dry ingredients and fold gently with a rubber spatula until just combined (12-15 strokes). Do not overmix.
  6. Fill the donut pan: Transfer batter to a piping bag or ziploc bag with the corner snipped off. Pipe batter into each donut cavity, filling about ¾ full.
  7. Bake the donuts: Bake for 10-12 minutes, until golden brown and a toothpick inserted into the thickest part comes out clean. Let cool in pan for 2-3 minutes, then turn out onto a wire rack.
  8. Make the maple glaze: In a small bowl, whisk together powdered sugar, maple syrup, vanilla extract, and 1-2 tablespoons of milk until thick but pourable.
  9. Glaze the donuts: Dip the top of each warm donut into the glaze, letting excess drip off. Place glazed donuts back on the rack, glaze side up. Let set for about 10 minutes before serving.

Notes

Don’t skip reducing the cider—it concentrates the apple flavor. Glaze while donuts are warm (about 5 minutes out of the oven) for best adherence. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use almond milk with vinegar, flax egg, and coconut oil. Freeze unglazed donuts for up to 3 months.
